For this special dinner, Éric Frechon presents a four-course menu highlighting several of his signature dishes. Sologne caviar with smoked ratte potato mousseline and haddock sets the tone, followed by day-boat sole, meunière-style with buckwheat butter and stuffed with chanterelles.
As a main course, Bresse chicken with asparagus and morels, delicately infused with vin jaune and served in two parts, reflects the finesse of exceptional craftsmanship. To conclude this gastronomic journey, a dessert centred around chocolate will awaken the senses: warm espuma, caramelised hazelnuts and coffee ice cream – a perfect balance of richness and refinement.
