Fine Strawberry and Fennel Brioche by Chef Yannick Alléno

Follow the Chef Yannick Alléno’s recipe series made for the Le Jardin restaurant of Royal Mansour Marrakech. Today, we share with you an easy recipe to make at home: Fine Strawberry and Fennel Brioche. A treat for the taste buds!

THE RECIPE’S INGREDIENTS

To make the Fine Strawberry and Fennel Brioche, you will need the following ingredients:

For brioche dough:

  • 500 g wheat flour
  • 60 g sugar
  • 10 g salt
  • 20 g baker’s yeast
  • 138 g eggs (2 large eggs)
  • 160 ml milk
  • 50 ml water
  • 175 g butter

Strawberry jam

For semi-confit fennel:

  • 3 pc fennel
  • 250 g sugar
  • 2 pc vanilla beans
  • 0,5 l water
